Tellcherry peppercorns are named for the port town of Thalassery on India's Malabar Coast — the region that has produced the world's finest black pepper for centuries. The key difference is maturity: Tellicherry peppercorns are left on the vine longer than standard black pepper, allowing the berry to grow larger and develop a more complex flavor — brighter, more floral, and with a heat that builds slowly rather than hitting immediately. HOW TO USE
Use a pepper grinder and grind directly over food — the difference between freshly ground Tellicherry and pre-ground pepper is immediate and significant. Never use pre-ground.
Grind generously into cream sauces, pan sauces, or butter while they're still hot. The heat blooms the pepper's aromatic compounds into the fat for a rounded, complex pepper flavor.
