  • 1 shallot, finely diced
  • 1/2 onion, chopped
  • 2 cloves garlic, minced
  • 1 stalk celery
  • 2 tbsp olive oil
  • 1 tbsp Fine Spice Spicy Italian
  • 1 tbsp Fine Spice Roasted Garlic Pepper
  • salt & pepper, to taste
  • 1 can tomato sauce
  • 2 tbsp tomato paste
  • 1 bay leaf
  • spaghetti noodles
  • dried parsley, for garnish
  • freshly grated parmesan cheese, for serving

Directions

1. Saute the aromatics:

  • Heat olive oil in a large skillet over medium heat. Add shallots, onion, celery, and garlic. Cook until soft and fragrant.

2. Brown the meat

  • Add the ground meat to the pan. Cook until browned, breaking it up with a spatula as it cooks. Season lightly with salt and pepper - optional.
  • Sprinkle in Spicy Italian and Roasted Garlic Pepper blends. Stir well to coat the meat and vegetables, allowing the spices to bloom in the oil for deeper flavor.

3. The Sauce

  • Stir in the tomato paste and cook for 1-2 minutes until slightly caramelized. Add tomato sauce, and bay leaves. Reduce heat and simmer for 20-25 minutes, stirring occasionally, until the sauce thickens and flavors blend.

4. Cook the pasta

  •  Meanwhile, boil spaghetti in salted water until all dente. Reserve 1/2 cup of pasta water before draining.

5. Combine and finish

  • Toss the cooked spaghetti into the sauce, adding a splash of pasta water if needed to help the sauce coat evenly. Simmer together for 1-2 minutes

6. Serve:

  • Top with freshly grated parmesan, a drizzle of olive oil, and dried parsley for garnish.
