Ingredients

  • 1 bunch kale, washed, de-stemmed, and chopped
  • 2 chicken breast
  • 1 tbsp Fine Spice Roasted Garlic Pepper
  • 2 tbsp olive Oil
  • 1/4 cup Parmesan cheese, shaved or grated
  • 2-3 tbsp Caesar dressing, see below
  • 1/2 lemon, juiced
  • Salt & pepper to taste

For the Croutons

Caesar Dressing

  • 1 egg yolk, room temperature
  • 1/3 cup olive oil
  • 1 garlic clove, finely minced
  • 2 anchovy fillets (or 1 tsp anchovy paste)
  • 2 tsp Dijon mustard
  • 2 tbsp fresh lemon juice
  • 1/4 cup finely grated Parmesan cheese
  • 1 tsp Worcestershire sauce
  • 1/4 tsp Fine Spice Roasted Garlic Pepper
  • Salt and black pepper to taste

Directions


Make the Tuscan Croutons

  • Preheat your oven to 375°F (190°C).
  • Toss bread cubes with olive oil and Fine Spice Tuscan Bread Dipping Seasoning.
  • Bake 8-10 minutes, stirring halfway, until golden and crisp. Set aside.

Cook the Chicken

  • Pat chicken dry and season with Fine Spice Roasted Garlic Pepper
  • Heat olive oil in a skillet over medium heat.
  • Sear 4-5 minutes per side until golden and cooked through. Rest before slicing.

Prepare the Kale

  • Massage kale with a drizzle of olive oil and pinch of salt for 1-2 minutes until slightly softened and glossy. 

Caesar Dressing

  • Whisk together egg yolk, garlic, anchovy, mustard, and lemon juice until creamy.
  • Slowly drizzle in olive oil while whisking constantly to emulsify.
  • Stir in Parmesan, Worcestershire, and Fine Spice Roasted Garlic Pepper.
  • Taste and adjust with lemon or seasoning. 

Assemble the Salad

  • Add Caesar dressing to kale and toss evenly.
  • Top with sliced chicken, Tuscan croutons, and Parmesan.
  • Finish with a squeeze of fresh lemon.

Serve and Enjoy

  • Serve immediately for the best crunch and flavor.
